Roasted Red Potatoes (http://www.eeecooks.com/)

Serves: 4 (weight watcher info:  2 points each serving)

Prep time: 15 minutes

Cook time: 40 minutes


6 red potatoes, large, cut into small chunks

2 teaspoons olive oil

1/2 teaspoon fresh ground black pepper

1 teaspoon salt, kosher

Begin by preheating the oven to 425 degrees.  Place the just-cut potatoes in a bowl and toss them with other ingredients.  Once they are well-coated, spread them out over a parchment paper covered cookie sheet (I use aluminum foil and it works fine).  Put them in the oven and bake for 40 minutes or until they are tender and begin to brown.
