COWBOY COFFEE CAKE

 

Ingredients:

2    cups all-purpose flour

2 cups packed brown sugar

    teaspoons salt

2/3 cup shortening

2 teaspoons baking powder

    teaspoon baking soda

    teaspoon ground cinnamon

    teaspoon ground nutmeg

1 cup sour milk (1 tablespoon lemon juice or vinegar in measuring cup with enough milk to make 1 cup.  Let stand for 5 minutes.)

2 beaten eggs

1/3 cup chopped nuts

 

In mixing bowl, stir together flour, sugar and salt.  Cut in shortening until mixture resembles coarse crumbs. Reserve     cup mixture for topping.  To remaining crumbs add baking powder, soda and spices.  Mix well.  Add milk and eggs.  Mix well.  Turn into 2 greased and floured 8 x 1    or 9 x 1    inch round baking pans.  Combine the     cup reserved crumbs and nuts, sprinkle over batter.  Bake at 375 degrees for 20 to 25 minutes.  Serve warm.  Makes 2 coffee cakes.
